I have spent the past 40 years creating and enjoying plant based food and have been working as a professional chef since 2019.
Wildings Vegan Kitchen was established to meet the growing demand for home cooked vegan food in North Wales, where I’ve lived since 2007. What began as friends encouraging me to share my creations, quickly progressed into cooking for retreats, private dinners, events and pop-ups. Having been purely self-taught, I then trained at Demuths cookery school in Bath, UK where I learned so much more about making not only food bursting with interesting flavours and textures, but food that looks beautiful on a plate.
I was at your retreat this weekend and the food was divine. I love desserts and yours were so unique, pretty and tasty – your day 2 dessert was the best I’ve ever tasted!

Catherine’s food has always been wonderful. For the five years that I’ve worked with her, she has been constantly exploring and trying out new recipes, tastes and ideas. Our guests are always amazed at how fantastic her vegan meals are and the positive feedback is endless. She has transformed our retreat menu to an inspired array of dishes that delight the taste buds, while somehow remaining simple, nourishing and heart warming.
Wonderfully varied and tasty meals which never fail to disappoint. Curry night is one of our favourites!
We first tried Catherine's cakes a couple of years back and have been obsessed with them ever since.. every one we've tried has been mouthwateringly delicious. We've even decided to have Catherine make our favourite Millionaires Shortbread for our wedding cakes!

We attended a Greek inspired vegan night at Catherine’s home. The food was varied and
tasted outstanding. I would highly recommend attending one of her events.
During lockdown Wildings Vegan Kitchen offered ready meals, either fresh or frozen, for
collection. While I have been a vegetarian all my life, having taken advantage of their
delicious takeaways I am now virtually vegan. So tasty, nutritious and pleasing on the eye.

My approach to food and cooking is about creating nutritious, exciting meals which rely on fresh produce as their star component. I’m always rather baffled when people ask “what I can eat” as a vegan. I can safely say that I don’t struggle for ingredients or ideas – and let’s
not forget dessert options either (I’ve always had a shockingly sweet tooth!)
When I’m not cooking, you can usually find me on a windswept beach with my dog Blue or hanging out with my (very nearly grown up) kids. I have family in Greece too, so I’m lucky to have sunshine options when the North Wales weather gets a bit too miserable.
